Vegan Apple Cinnamon Muffins {Perfectly Sweet and CHUNKY}


As requested... here is my favorite, super yummy vegan muffins!!


These muffins are super moist and a perfect healthy snack or breakfast ( I could eat 2 or 3 in one sitting). Also I think the fact that their vegan is what makes them super moist- the banana and coconut oil really work wonders in this recipe.

My version has half the sugar and more fiber from added oats.






Ingredients:

• 1 large apple (Honey Crisp or green Granny Smith apples work best)

• 1 large VERY ripe banana

• 1 cup of all purpose flour

• 1/3 cup rolled oats

• 1/3 cup melted coconut oil

• 1/2 cup unsweetened almond milk

• 1/2 cup granulated or brown sugar (or coconut sugar/sweetener works too)

• 2 teaspoons baking powder

• 1 tablespoon vanilla extract

• 2 teaspoons cinnamon




Directions:

Prep:

  1. Preheat oven to 400 degrees celcius and spray a non-stick 12-cup muffin tray

  2. Chop up the apple into cubes and in a small bowl, coat in a tablespoon of flour and some cinnamon (flour helps prevent it from falling to the bottom of the muffin)

Batter:

  1. In a medium bowl mix wet ingredients: mash the ripe banana very well, add the coconut oil (melted), almond milk (room temperature helps prevent the oil from solidifying), vanilla extract and 2 teaspoons cinnamon

  2. Then dry ingredients: add 1 cup flour, baking powder, sprinkle of salt and stir until combined: DON'T OVER MIX- mixing too much will make the muffins hard and not as moist

  3. Fold in the apples, leave some to top off the muffins at the end. Add batter into muffin tray.

  4. Bake muffins for 17-18 minutes or until a toothpick can be inserted and comes out clean. Allows muffins to cool for about 10 minutes

  5. Enjoy the best vegan muffins you will ever bake!!
