Healthy Vegan Matcha Cookies!

If you’ve ever wanted to experiment with a new recipe, THIS is the one to try.
And if you know me, I'm hesitant to call anything "healthy" because I believe EVERYTHING is healthy in moderation, but the ingredients in these cookies are just amazing.
This recipe makes 6-7 cookies but you can double it for more
RECIPE:
1 cup almond flour
1 tbsp matcha
1/4 tsp baking powder
3 tbsp maple syrup (or sugar free syrup like monk fruit/ Sf maple)
1/8 cup (= 2tbsp) melted coconut oil
To decorate:
melt dark chocolate with some coconut oil
RECIPE:
1. Mix dry ingredients well, then add maple syrup, coconut oil and vanilla extract (optional)
2. Dough should be very sticky, roll out into balls and flatten them a little with your fingers before laying on a greased tray
3. Bake at 325 F for 10-12 minutes, then allow to cool for 5 mins before drizzling chocolate and adding a touch of sea salt
NOTES: these cookies are softer than regular cookies, so don’t expect them to be crunchy. Also make sure you use almond FLOUR not almond meal.
