Refined Sugar Free, MOIST Banana Bread!
Updated: Jul 5, 2021
If you follow me on Instagram or Youtube, you would know I don't love calling anything "Healthy" or making any foods like sugar seem "bad". So I wanted to remind anyone reading this: while this recipe calls for honey instead of sugar, remember that honestly, there's not much of a difference! And neither ingredient are "bad" by any means.
Just wanted to experiment with a new recipe and I LOVE how it turned out!
Ingredients:
2 eggs
1/3 cup honey
1/2 cup melted coconut oil
1/4 cup Greek yogurt
1 teaspoon vanilla extract
1 cup mashed ripe bananas about 2-3 medium bananas
1 3/4 cups all purpose flour
tsp ground cinnamon (optional)
1 teaspoon baking soda
½ teaspoon salt
1/2 cup dark chocolate chips (I used 65% and added extra on top)
optional: add in nuts, or top with nuts (I used pecan)
✨Pre-heat oven to 325F. Grease a 9x5 inch loaf pan. Mash bananas with a fork (very well)
✨In one bowl whisk the flour, cinnamon, baking soda and salt. Set aside.
✨In a large bowl, beat eggs, oil, honey, milk and vanilla until well combined. Stir in the bananas, flour mixture and chocolate chips (or any other add ins of choice.
✨Pour into greased pan, sprinkle with some more cinnamon
✨Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, and enjoy!
